Lasagna

Its pronounced Lazanya, please dont ask me why its spelled that way, i just know how to cook it :)

Lasagna is basically flat pasta which is sandwiched with red and/or white sauce and various veggies.

For the Red Sauce:

Chop 10 medium sized tomatoes.

In a heavy bottomed vessel, heat 8-9 tablespoons of olive oil. Add 3 cloves of finely chopped garlic and 20 basil leaves. Add 3/4th the chopped tomatoes and 1 tablespoon of powdered jaggery, cover the lid and cook on low heat for 15-20 minutes until the tomatoes are cooked stirring occasionally. Add the rest of the tomatoes and cook for a further 5-7 minutes. Add salt to taste.

With a hand mixie, whirrrrr, but take care not to blend to a smooth consistency, leave the sauce a bit chunky.

In another pan, heat olive oil and add coarsely chopped veggies of your choice and lightly stir fry them. I used broccoli, zucchini, mushrooms and carrots. Add salt to taste.

Grease the baking tray with butter. Cover the bottom of the tray with a thick layer of red sauce. Add sheets of lasagna. Add layer of red sauce and a layer of the veggies. Add sheets of lasagna, if using white sauce as well, now layer with white sauce and veggies. Add sheets of Lasagna.

Repeat the process alternating red and white sauce, veggies and lasagna sheets. Finish off with red sauce on the top. Sprinkle some grated cheese, cheddar or mozzarella is great, you can experiment with gorgonzola as well.

If you were using just the red sauce, then alternate layers should have some cheese sprinkled in between them.

There should be at least 8 layers. 12-15 layers is best. Just go on making layers until you run out of pasta sheets, veggies or sauces :)

Bake at 250 deg for 20ish minutes till the cheese has melted and browned.

Serve hot with buttered bread.

    Must confess dont like reading your recipes, because i never venture into the kitchen, but lasagna oooooo mouth watering now with a bit of pampering of my sister i know i can get the job done..:):)

    To Nithya :- hmm 24 surya namaskars, 2 rounds of padmasadhana , short kriya every day, long kriya every week once, one satsang every week, 5 randoms acts of kindness every day ( bascially talk to 5 people every day abt course) , seeing shri shri video every day, one advanced course every 3 months,you are too tooo tooooo high on energy…

    too bring the energy down u need to eat this lasagna… :)

    My recent most (16th march) visit to big chill and the lasagna (mushroom and spinach) there made me wonder if it is very difficult to cook it. And would I be able to do it as easily as the pasta.. :) )

    yummm bau.. and ever tried the same combinations of veggies with some soft crushed cottage cheese(homemade)paneer?its tates nice.. but ur recipe of red sauce sounds interesting will try it out soon JGd..

    khurshed, i love your recipes. a couple of tips which may be obvious for a pro like you, but is puzzling for a novice like me. like you seem to be skipping mentioning salt (and pepper) in your recipes. do you really skip them or just dont mention it coz its obvious? also, in this recipe is the baking time 2 mins or 20 mins?

    thanks a ton, especially for your pasta recipes. :) lasagna is sitting in my oven right now, getting baked and i am going to bake it for 20 minutes and take a chance. :)
