Pinacolada

It’s the one mocktail that i almost always order whenever we go out to eat. Each restaurant has its own recipe, and no two ever taste exactly the same… So i made up my own recipe for it and it turned out really nice!! 🙂

This recipe makes 8 medium sized glasses…

2 large pineapples

400 ml coconut milk (2 packets)

1 liter of French Vanilla ice cream

a tray of ice cubes

In 8 glasses add a scoop of the Vanilla ice cream. Put in freezer.

Cut the pineapples into medium sized chunks.

In a mixie whirrr the pineapple pieces with some ice cubes. Don’t strain. To the pulped pineapples add all the coconut milk and the remaining ice cream. Whirr all this again in the mixie until blended and smooth. Add to the glasses with the ice cream in them. Decorate each glass with a pineapple wedge if you remembered to keep some aside. Serve immediately. Eight glasses will be enough for 4 people. They will all want at least one more 🙂

    Jgd Bau. All mocktail is served without alcohol thats y its named with a “VIRGIN”.In this case its known as Virgin pinacolada. and bfore pouring the drink in the glass you can even put some green or blue colored syrup on the walls of glass and roll it its gives a pleasant color to the drink.

      A Mocktail is a cocktail thats without alcohol, so if you use the work mocktail, you dont need to say virgin, it automatically means its without alcohol
      And i dont like to put synthetic syrup, just for some colour, when the original looks so pretty

  12. French vanilla ice cream is made with a base containing egg yolks. A lot of egg yolks in fact: 8 egg yolks in a tub of french vanilla ice cream. So, that’s one egg yolk in every glass of the mocktail pinacolada!

      phillip, in India we have totally vegetarian french vanilla ice cream… in the US you can easily make it using egg replacer 🙂
      Every single recipe on this blog is a 100% veggie, you may need to look for veggie alternatives where you stay though…

    Hi Bau,
    This is a recipe I learnt in a mixology class I recently took.

    Virgin Pina Colada
    4 cups ice (~ 12-14 cubes)
    5 cups pineapple juice or puree
    1/2 cup raw/demerera sugar
    2 cups heavy cream (can substitute with whole milk)
    2 cups coconut milk
    2tblsp lime juice

    In an electric blender, blend the ice, pineapple puree and sugar in short bursts till the ice is almost crushed.
    Drizzle in the heavy cream/milk and coconut milk and blend to a slush.
    Stir in the lime juice and pour into glasses.
    Garnish with a maraschino cherry and pineapple slices.

    Serves 8-10
