Tasty (?) Doodhi!!

I had told her to get some pumpkin, nice, yellow pumkin… she got doodhi (bottle gourd)! Now, i have never really liked doodhi in any of its many preparations…

…And so, it sat in the fridge for some time, waiting patiently for its turn to be cooked… Sunday evening, i was feeling creative and decided to make tasty doodhi… there is of course doodhi halwa and doodhi kofta, which i find tolerable, but all those take too much time and effort to make… sooooo, here is what i did :)

Wash, peel and cut the doodhi into small chunks (our doodhi was a medium sized one)

In a thick bottomed saucepan, put a generous 2 tablespoons of ghee and let it melt over a slow fire. Next add 4 small (1 inch) pieces of cinnamon, 4 pieces of cloves and 4-5 pieces of crushed cardamom (elaichi) and cook gently. Add a teaspoon of mustard seeds (rai) and let them pop and crackle for a bit, then add 2-4 heaped teaspoons of dhania-jeera powder (I use Prakriti Network Masalas only, but you can use any good organic brand) and cook the masalas well. Add salt to taste.

Next add the chunks of doodhi and let it cook over a low flame, absorbing all the spices into it. The room should fill up with a very pleasant aroma. Once its completely cooked, stir in 2 tablespoons of fresh cream. Remove from heat at once. It’s not a good idea to heat it once you have added the cream, so do that just before serving…

Serve piping hot, garnished with a bit of chopped corriander and raw tomato pieces. Will go really well with some hot rotis or toasted wholewheat bread and butter.

And for the record, it tasted really good! Got over in less than 5 minutes! :)

    DUDHI is the vegetable i buy cause its healthy, but once i put it in frigde than it becomes difficult to get it out and cook something of it…..but with this recipie and asurance by bawa about its taste i will cook it today itself…thanks a lot
